Ingredients:
- 2 Egg Yolk (large)
- 3 Egg White (large)
- Milk 66ml
- Oil 34g
- Cake Flour 66g
- Baking Powder 3/4 tsp
- Vanilla extract 1/2 tsp
- Sugar 48g
Preheat Oven 360oF - Grease & line cake pan with parchment paper
- Beat Egg Yolks till color turns pale (power mixer medium speed)
- Add Milk (room temp.) slowly into yolk and continue the mixing with a hand whisk.
- Add Oil slowly into the yolk mixture.
- Add vanilla extract.
- Sift Flour & Baking Powder into Yolk mixture (in 3 batches). Mix till just combines.
- Beat Egg White till firm peaks. Add sugar in 3 batches.
- Fold egg white into yolk mixture in 3 batches.
- Bake at 355oF for 25 minutes. (roll recipe, bake for 10-13 minutes)
- Remove from oven and invert to cool.
